Ingredients
Chicken Marinade
2tbsp.finely chopped green oniongreen part only
2tbspolive oil
1tbsplime juice
1tbsp.chopped fresh Italian parsley
1tbspchopped fresh oregano
1cloveminced garlic
Chicken & Sausage Kabobs
1lbboneless chicken breast cut into long strips1/2" thick
8ozandouille sausageor chicken apple or smoked sausage cut diagonally into 1' slices
bamboo skewerssoaked for 1 hr before using or metal skewers
Herbed Dipping Sauce
1/4c.sour cream
1/4c.mayo
2tbspfinely chopped green onionsgreen part only or chives
1tbsplime juice
1cloveminced garlic
1tbspchopped fresh Italian parsley
1tbspchopped fresh oregano
Instructions
Combine marinade ingredients in a large sealed plastic bag with chicken and marinate for 2 to 8 hours in refrigerator (I recommend 8 hrs for full flavor.)
Drain chicken and thread with sausage onto skewers.
Grill on medium heat for 8 - 12 minutes, or until done, turning once.
Herbed Dipping Sauce
Combine all ingredients in small bowl and stir to combine. You can serve this right away, but it's best if you make it when you make the marinade and then refrigerate to blend the flavors.
