Ingredients
2packets8.8 oz each Uncle Ben's Long Grain Ready Rice (or 1 c. uncooked long grain rice)
1/2c.sour cream
3tbsp.fresh lemon or lime juicedivided
2green onionsthinly sliced, plus additional for garnish if desired
2tbspchopped flat leaf parsley, plus additional for garnish if desired
2tbsp.extra-virgin olive oil
1red peppercoarsely chopped
Kosher salt and pepper
1 1/2lbs.rawpeeled and deveined shrimp, thawed
2clovesminced garlic
2tbsp.chopped fresh oregano
1c.frozen cornthawed
Instructions
Heat the oil in a large skillet over medium heat. Add the red pepper and season with 1⁄4 tsp. each salt and pepper. Cook, stirring occasionally, until pepper begins to soften, about 5 minutes.
Season the shrimp with 1⁄4 tsp. each salt and pepper, add to the skillet along with garlic and oregano, cooking for 2 minutes. Add corn and cook, stirring frequently, until the shrimp are opaque throughout, about 2 minutes more. Toss 1 with tablespoon lemon or lime juice. Take off heat and cover to keep warm.
Microwave rice according to package directions. Set unopened packet aside. Combine sour cream and remaining 2 tablespoons lemon or lime juice and microwave for about 15-20 seconds on 50% power to gently warm. Fold rice along with scallions and parsley into rice. Season to taste with salt and pepper. Serve shrimp and vegetables over rice. Sprinkle with additional green onion or chopped herbs, if preferred.
Note - If you are using rice prepared on the stove top, start the cooking process before the shrimp, following the package instructions. Then prepare vegetables and shrimp so they are done when the rice is ready.
Notes
Note - I have also added 1/2 c. of sliced sugar snaps peas after the red peppers have sauted for 4 minutes. This adds some additional color and marries well with theother flavors in this dish.
