Ingredients
8ouncessoftened cream cheese
3/4cupmayonnaise
juice of 1/2 lemon
3/4cupchopped cooked shrimpsee notes
1/4cupchopped celery
1/4cupthinly sliced green onionsscallions
kosher saltto taste
freshly ground black pepperto taste
Instructions
Combine softened cream cheese, mayonnaise and lemon juice. (I used a hand mixer to reach for a well blended consistency but you can mix by hand as well.)
Stir in chopped cooked shrimp, chopped celery and green onions. Season with salt and pepper and top with additional sliced green onions if desired. Serve with potato chips or crackers.
Notes
You can purchase cooked shrimp or saute uncooked shrimp seasoned with kosher salt and fresh ground pepper in olive oil. Cool cooked shrimp and pat with paper towel to remove excess oil before chopping.
Can be made a few hours or up to a day advance.
I do recommend letting the dip soften up at room temperature for 15-20 minutes before serving.
