Ingredients
4bonelessskinless thighs or breasts, trimmed and cut into bite-sized pieces
1cupred bell pepper coarsely chopped
1/2onion choppedcoarsely chopped
1zucchini coarsely chopped
1cupbroccoli floretscut in bite-sized pieces
1cupcherry tomatoes
2tablespoonsolive oil
1/2teaspoonsalt
1/2teaspoonblack pepper
2teaspoonitalian seasoningor seasoning blend of your choice
1/4teaspoonpaprika
Instructions
Preheat oven to 500 degree F.
Place the chicken and veggies in a medium roasting dish or on a sheet pan. Add the olive oil, salt and pepper, italian seasoning or selected seasoning blend, and paprika. Toss to combine.
Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy as a low carb meal or serve with rice, pasta, or add to a salad.
