Place pizza stone in oven and heat to 500 degrees
If using home made dough, lightly sprinkle a pizza peel (highly recommended for easier transfer to oven) or large cutting board with corn meal. This is not required if you are using a ready made crust. Place rolled out pizza dough or ready made crust onto peel/cutting board.
Scatter provolone over crust. Top with caramelized onions, dabs of fig jam, crisped prosciutto, crumbled Gorgonzola and chopped thyme.
Slide pizza onto preheated pizza stone and bake for 5-6 minutes. Enjoy!
